Super Carrot Cookies


I am determined to get Adi to eat more veggies, so what better way then to put them in a cookie! I made these this morning, and there are a lot of ingredients. They are pretty good. I am thinking of putting some green apples in here next time!

Super Carrot Cookies

1/3 cup canola oil

2/3 cup light brown sugar

1/2 teaspoons baking powder

1/2 teaspoons baking soda

1 1/2 teaspoons cinnamon

1 teaspoon ground ginger

1/4 teaspoon ground cloves

1/4 tsp ground nutmeg

1/2 teaspoon salt

2 teaspoons vanilla extract

1 egg

2 Tablespoons maple syrup

1 cup grated carrots

1/2 cup pecans, chopped and toasted

1/2 cup dried cranberries

1/2 cup semisweet or bittersweet chocolate chips

1 cup white whole wheat flour

1 1/2 cups rolled oats

Instructions:

Preheat oven to 350. Line two baking sheets with parchment paper.

In a large mixing bowl, combine the oil, sugar, baking powder, baking soda, cinnamon, ginger, cloves, nutmeg, vanilla, and egg, mixing until smooth. Add syrup. Stir in the carrots, cranberries, chocolate chips, pecans, flour, mixing gently until well combined. Add the oats last, making sure they are thoroughly distributed throughout the bowl.

Drop tablespoon-sized balls of dough into prepared sheets, leaving about 1 1/2-inches between them. Bake the cookies until they're just barely set on top - about 12 to 15 minutes.

Break from the heat

It has been RIDICULOUSLY hot and humid here. We haven't been able to go outside at all. Especially with Adi being so sensitive to getting diaper rash. I ran to just a few places on Friday, and I think from getting Adi in and out of the hot car - we had diaper rash by the evening. Today was a little big cooler so I pulled her water table into the shade and I let her loose. By the time we were finished she was grassy, muddy, and ready for a nap! :)
(By the way - she has a bow on because I am sick of people caller her a boy! She has one little sweet curl on the back of her head - aka: rat tail as dad has dubbed it. She was called a boy twice at the store today. It is even when she has dresses on - HELLO PEOPLE)




Too much SOBE - I'm water logged (jk - she only drinks water)

Please eat your veggies

We have definitely entered the world of having a toddler. Adi hasn't been eating very much for dinner, so I am trying to sneak in veggies wherever I can. I woke up early and made these cute little frittatas with one of Adi's favorite veggies in it - zucchini! As you can see from the pictures below if it is not a "bread" item she wants nothing to do with it!

Hot Rod Nationals - Louisville

We went to Hod Rod Nationals in Louisville this weekend with some friends of ours. We had a wonderful weekend, and the weather wasn't too bad. Adi did such a great job being out and about all day Friday. It is so nice to get away for a weekend and spend the whole time as a family. We stayed downtown and ate at some great places. There are a lot of pictures!

12 Months Old

12 Month Stats:

Height - 28.5 inches (25th percentile)
Weight - 18 lbs 3 oz (7th percentile) YIPPEEE she's back on the charts!


Sleep - This will be my last update for sleeping. She has been a great little sleeper lately. There has been a lot of traveling this past month with Bran in Japan, and she has adjusted wonderfully. She is basically sleeping for 12 hours a night. Her bed time is quite a bit later, but I just can't seem to adjust it any earlier.

Milestone - She is WALKING! While this is very exciting for her and us - my life just a got a lot crazier now that she can run away from me (which she thinks is hilarious). She is understanding and interacting more and more each day. She knows what sounds the cat, dog, owl, cow, and train say - and can tell us. A favorite word of hers lately has been "baby". She has been really into owls and is starting to really enjoy reading. She doesn't always sit still, but I know she is listening and enjoying them which makes me so happy. Another break through - WE FIGURED OUT WHO BOB IS - it's Cooper. I have been saying Cooper-dog for months; in the hopes that she would make the connection of what a dog is. Well she has - in fact months ago - so, BOB is Cooper (I guess she is trying to say dog, but it sounds just like Bob)!

Her two week birthday celebration was wonderful. We were fortunate enough to spend it with both sets of our parents and great friends. Adi had a great day and did so well at the party. She really is becoming such a big girl and it is such a blast.
